Ingredients:
- 1 cup Rice, cooked and chilled – 206Cals *I used brown + white rice.
- ¼ cup mixed Carrot, Corn & Peas – 30Cals
- ¼ cup Red Cabbage, shredded – 5Cals
- 2 tbsps. Red Bell Pepper, diced – 5Cals
Sauce
- 1 Egg – 63kcal
- ½ tbsp. Soy Sauce – 8 kcal
- 1 tsp. Sesame Oil – 40kcal
- ½ tsp. Garlic Powder – 5 kcal
Total Calories: 362Cals
Steps:
- Add all ingredients into a mug and microwave for 1 minute 30 seconds.
- Add eggs, soy sauce, sesame oil and garlic powder in another bowl and stir it evenly.
- Remove rice from microwave, pour sauce mixture into the mug and mix well.
- Heat it in the microwave again for another 1 minutes 30 seconds.
- Garnish with spring onion and ready to serve.
2. Vegan Couscous Salad in a Mug
Ingredients:
- 1/3 cup Couscous – 59Cals
- 1/3 cup Vegetable Stock or Water – 5Cals
- ¼ cup Cucumber, diced – 4Cals
- ¼ cup Red Bell Pepper, diced – 10Cals
- ¼ cup Cherry Tomatoes, halved – 7Cals
- 1 tbsp. Olives, halved – 10Cals
- 1 tbsp. Spring Onions, chopped – 2Cals
Sauce:

Steps:

- Add cucumber, red bell pepper, tomato, olives, green onion and the sauce into the mug. Mix well and Enjoy!
3. Rice Noodle Salad in a Mug
Ingredients:
- 3oz (85g) Rice Noodles – 93Cals
- ¼ cup Carrots, shredded – 13Cals
- ¼ cup Red Cabbage, Shredded – 5Cals
- ¼ cup Red Bell Pepper, shredded – 10Cals
- ¼ cup Japanese Cucumber, shredded – 4Cals

Steps:

4. Black Bean Tomato Rice in a Mug
Ingredients:

Steps:
