With most of us spending more time at home working, and studying, we tend to reach for unhealthy snacks at home. Here are 3 of my favourite snack recipes which are healthy, extremely easy to make (only 5 - 8 ingredients each) and will provide you with energy to keep going!
1) Banana Oat Muffins (makes 8 - 10)
- 1.5 cups Oats
- 1/2 cup Greek Yoghurt
- 2 Bananas, mashed
- 2 Eggs
- 2 tbsps. Honey / Maple Syrup
- 1/4 cup crushed Walnuts
- 2 tbsps. Dried Cranberries
- 1 tsp. Baking Soda
2) Dark Chocolate Smoothie (serves 1)
- 1 Banana
- 1/4 cup Greek Yoghurt
- 1 cup Unsweetened Soy Milk
- 1/4 cup Strawberries
- 1/4 cup Blueberries
- 1 tbsp. Chia Seeds
- 1 tbsp. Dark Chocolate Powder
3) Chia Pudding (serves 2)
- ¼ cup Chia Seeds
- 1 cup Milk, any choice
- 1 tsp. Maple Syrup or Honey
- 1 Large Banana, mashed
- 2 tbsps. Peanut Butter
